Lactic acid from lactic acid bacteria lowers pH, repelling most spoilage organisms. Salt in miso suppresses contaminants through osmotic pressure, and acetic acid in vinegar has strong germicidal power. Some lactic acid bacteria even produce natural antimicrobial peptides called bacteriocins.
