A unit indicating sugar concentration in a solution. Easily measured with a refractometer, it serves as an indicator of saccharification progress in amazake and yeast starters.

Brix indicates grams of solids (mainly sugars) per 100g of solution. Measurable by simply dropping a sample onto a refractometer, it is widely used for on-site quality control.

Amazake typically shows a Brix of 20–30%, serving as a gauge for saccharification progress. In sake mash (moromi), tracking Brix changes helps estimate alcoholic fermentation progress.

Strictly speaking, Brix is 'apparent sugar content calculated from refractive index,' and dissolved substances other than sugar also affect readings. For complex foods like miso, it serves as a reference; for simpler systems like amazake, it is a reliable indicator.
