A unit measuring food energy. Fermentation can alter nutrient composition, sometimes changing caloric value.
A calorie is a unit measuring the energy content of food. In common use, kilocalorie (kcal) is the standard.
Fermentation doesn't dramatically change calorie content, but it does cause subtle shifts. In alcoholic fermentation, sugar becomes ethanol, which itself carries about 7 kcal per gram. In lactic acid fermentation, sugar becomes lactic acid, slightly reducing calories.
The essential value of fermented foods lies not in calorie count but in improved digestibility and increased micronutrients. Fermentation is a technology that changes quality, not quantity.
