Chutney

Japanese: チャツネ

A South Asian condiment of fruits or vegetables cooked with spices and vinegar, or fermented. It combines sweet, sour, and spicy flavors.

Chutney is an essential condiment in South Asian food culture. Fruits like mango or tamarind and vegetables like tomato or onion are cooked with spices or fermented. Fresh chutneys are instant types made by grinding mint or coriander; cooked versions are shelf-stable in jars. Both accent meals. Fermented varieties gain complexity from lactic acid bacteria, adding a distinctive sour dimension. Chutney varieties are countless, with entirely different recipes by region and household. Beyond curry accompaniment, it complements sandwiches and grilled meat, serving as a culinary bridge worldwide.
