A method collecting and analyzing fermentation process data via sensors and IoT to inform brewing decisions. It aims to fuse empirical knowledge with data.
Data-driven brewing installs sensors in fermentation tanks and koji rooms, collecting and analyzing real-time data on temperature, humidity, CO2, pH, and microbial counts. Based on this data, preparation timing and temperature management are optimized. The goal is to supplement judgments traditionally relying on veteran craftspeople's senses and experience. However, what can be digitized is only a fraction of the fermentation process. Touch, aroma, subtle color changes—information difficult to quantify often determines quality. Data is a tool, not an end. The balance between the two determines data-driven brewing's success. Data-driven brewing can be an effective means of technical succession for small and medium breweries facing successor shortages. Converting artisan senses to data, accumulating and training on it—this is also an attempt to transfer skill from person to place.
