A general term for microorganisms involved in food and beverage fermentation. Representative examples include lactic acid bacteria, yeast, and koji mold, all producing metabolites useful to humans.

Fermenting microorganisms is a broad term for microbes involved in fermentation. Lactic acid bacteria, yeast, koji mold, acetic acid bacteria—each is a fundamentally different organism, yet they share the trait of producing changes beneficial to humans.

The same microbe can cause spoilage under different conditions. The distinction between fermentation and spoilage lies not in the microbe itself but in human judgment.

This is not a strict taxonomic term but rather a convenient label assigned from the human perspective.
