Food tech is a broad concept covering technology-driven food innovation. Within it, fermentation technology is among the most watched fields: precision fermentation for alternative animal proteins, AI optimization of fermentation processes, industrial mycoprotein production. These extend traditional fermentation while holding the potential to transform food's future. But technology alone does not complete food. Taste, culture, ethics—alongside food tech's advance, we must continue questioning food's essence. If traditional fermentation is analog technology, food tech is its digital expansion. They do not oppose each other: traditional wisdom is food tech's starting point, and food tech may revive tradition in new forms. Food's future lies in this reciprocal movement.
