The total genetic information of an organism. Recorded in DNA (or RNA in some viruses), the koji mold genome was fully sequenced in 2005.
A genome is the total genetic information of an organism. Often called a 'blueprint of life,' it may be more accurate to think of it as a 'recipe collection' for responding to the environment.
The genome of Aspergillus oryzae was fully sequenced in 2005. With roughly 38 megabases and over 12,000 genes, it was found to have an unusually large number of genes related to enzyme production—evidence that brewing-suited traits were enhanced through a long history of selection.
Genome sequencing is the starting point for understanding microbial capabilities and controlling fermentation more deeply. Yet being able to read a genome and understanding life are not yet the same thing.
