An indicator measuring fermentation progress through nitrogen content. Quantitative evaluation of proteolysis.

Nitrogen index represents the ratio of amino nitrogen to total nitrogen in miso. It quantifies how much protein has been broken down to amino acids, enabling objective evaluation of aging progress.

Higher nitrogen index indicates more advanced protein degradation and stronger umami. Combined with subjective tasting, it improves quality control precision. Scientific perspective does not deny sensory evaluation — it complements it.

The nitrogen index is a critical quality parameter also referenced in JAS miso standards. Different soybean varieties and steaming conditions affect achievable nitrogen index levels, requiring a holistic view of the entire process.
