Planetary health is based on the recognition that human health cannot be sustained without a healthy planet. The 2019 EAT-Lancet Commission report proposed dietary patterns beneficial for both people and Earth: emphasizing plant-based foods, reducing livestock products, minimizing food waste. Fermentation technology can contribute across these goals—enhancing digestibility of plant proteins, producing alternative proteins, improving food preservation. Toward planetary health, fermentation exerts a modest but reliable force. The 2019 EAT-Lancet report proposed dietary patterns to sustainably feed all people on Earth. By enhancing digestibility of plant proteins, fermented foods can be a technological key to realizing these dietary patterns.
