The design process of selecting ingredients, ratios, and aging conditions.

Recipe design means deciding what miso you want and choosing ingredients and ratios. Soybean variety, koji type, salt amount, aging duration — these shape the miso's character.

Start with a standard recipe. As experience grows, adjust koji ratios, try non-traditional ingredients. A fermentation log steadily improves design accuracy. Set your goal before starting. Sweet or dry? Short or long aging? Having a blueprint makes miso making far more enjoyable. There is no single right answer.
