A genus of filamentous fungi also known as bread mold. R. oligosporus, used in tempeh production, is the representative species, characterized by rhizoids and stolons.
Rhizopus is a genus of filamentous fungi commonly known as bread mold. Most black mold growing on bread belongs to this group. Its stolons (horizontally creeping hyphae) and rhizoids (substrate-penetrating structures) create a form reminiscent of a spider's web.
R. oligosporus, used in tempeh production, is a member of this genus. It covers soybean grains with white hyphae, binding them into a firm block. In Indonesia, this mold has been used for centuries.
Additionally, R. oryzae is involved in the fermentation of Southeast Asian alcoholic beverages like tapai and is also used industrially to produce fumaric acid and lactic acid.
