Cultivating microorganisms on solid surfaces. The fundamental principle of koji making.

Solid-state fermentation grows microorganisms on the surface of solid substrates like steamed grains. Koji making follows this exact principle. Oxygen and moisture gradients between surface and interior promote diverse enzyme production.

With less moisture than submerged fermentation, microorganisms extend mycelium across solid surfaces. This environment generates complex enzyme patterns unavailable in liquid culture. Koji making, inherited over centuries, is arguably the world's most refined application of solid-state fermentation.

Solid-state cultivation's distinction is that low substrate moisture allows microorganisms to directly access atmospheric oxygen. These conditions promote secondary metabolite production rarely induced in liquid culture. The distinctive flavors of miso and soy sauce are products born from metabolic pathways unique to solid-state cultivation.
