Thermodynamics is a branch of physics dealing with laws of energy conversion and transfer. It provides the theoretical framework for predicting whether chemical reactions 'can occur.'
Alcoholic fermentation—glucose becoming ethanol and CO₂—has a negative Gibbs free energy change (ΔG), meaning it's a spontaneous reaction that 'rolls downhill' energetically. Yeast acquiring ATP from this reaction occurs within thermodynamically permitted bounds.
Thermodynamics tells us 'whether a reaction will occur' but not 'how fast.' That's the domain of kinetics. Understanding both thermodynamics and kinetics enables grasping fermentation from two perspectives: possibility and speed of realization.
