Adding new value to waste or byproducts to create higher-quality products. Fermentation technology is a powerful means of upcycling.
Upcycling goes beyond recycling—it transforms waste into products of higher value than the original material. Fermentation is an excellent upcycling technology. Sake lees become pickling beds and confectionery ingredients; spent grain becomes bread; okara becomes tempeh. What would have been discarded is reborn as new food through microbial power. This appears to be a recent trend, but it is an idea already embedded in traditional fermentation culture. Fermentation carries an aesthetic of not wasting. Examples are expanding: bread beer using spent grain, whey beverages from cheese production. Breathing new life into fermentation byproducts—this idea lies at the heart of sustainable food systems.
