It is applied to managing batch variation in fermented foods, assessing aging, and designing new products. However, current technology primarily quantifies the five basic tastes; aroma, texture, and aftertaste—the holistic eating experience—still largely depend on human senses. AI taste analysis is not omnipotent, but as a tool for sharing hard-to-verbalize flavor differences, it holds potential to connect makers and consumers. AI taste analysis is applied to quality control of export products and analyzing overseas market preferences. As Japanese fermented foods reach global markets, AI analysis as a tool for quantifying and sharing taste will become increasingly important.
