Flavor is the comprehensive sensory experience integrating taste (tongue) and smell (nose) in the brain. Pinching your nose while eating makes flavor vanish—proof that flavor is a composite of taste and aroma.
Miso's flavor comprises taste components (glutamic acid umami, saltiness, sugar sweetness) plus hundreds of volatile aroma compounds engaging the olfactory system. Texture and trigeminal sensations also contribute.
Flavor's complexity cannot be fully reproduced by analytical instruments. Yet by combining GC-MS aroma analysis with sensory evaluation, we can gradually decipher flavor's 'blueprint.'
