Production method processing fixed quantities at once. Easier quality control per lot.
Batch processing handles fixed quantities of material, completing each step before proceeding. Miso preparation is traditionally batch — each preparation becomes one lot.
Conditions can be recorded per lot, offering excellent traceability. Slower than continuous processing but suited for small-quantity, multi-variety production. Home miso making is essentially batch-style. Engaging fully with each preparation is the basic of quality improvement and the smallest unit of lot management.
Batch processing's advantage is independent lot management, limiting the impact of any quality anomalies. Its compatibility with CIP (clean-in-place) sanitation is excellent, and it remains the dominant method in facilities producing many varieties in small quantities.
