Expanding production from research to industrial scale. Flavor reproduction is the greatest challenge.

Scale-up is the process of transitioning from laboratory or small-batch results to factory-level mass production. In fermentation, changing vessel size alters temperature distribution, oxygen supply, and microbial behavior — simply multiplying volume does not work.

A recipe successful at 10 liters may not taste the same at 1000. Heat transfer efficiency, agitation conditions, and culture time must be optimized through repeated pilot-scale verification. Expanding scale while preserving traditional flavor — a challenge demanding both technology and philosophy.

Geometric similarity is the basic principle for scale-up, but biological factors in fermentation are too complex for simple similarity rules alone. Computational fluid dynamics (CFD) simulation-based design approaches are increasingly adopted to address these challenges.
