Craft beer, craft sake, craft chocolate—the word craft has spread through the food world. Its essence is not scale but whether the maker's will and philosophy are reflected in the product. What mass production homogenizes, small-scale making transforms into individuality. Craft draws attention in fermented foods perhaps because those who work with microorganisms understand that no two batches are ever truly the same.
