An analytical technology that quantifies taste using multiple sensors. Mimicking the human tongue, it objectively evaluates taste patterns.

An electronic tongue detects taste compounds in solution using multiple chemical sensor arrays and quantifies taste through pattern recognition. It can individually score sweetness, sourness, saltiness, bitterness, umami, and astringency.

Unlike human sensory evaluation, which requires training and is influenced by physical and psychological states, electronic tongues offer reproducible, rapid measurements. In miso quality control, applications include detecting lot-to-lot variation and objectifying aging assessment.

However, electronic tongues detect individual taste components, not the integrated experience of 'deliciousness' humans perceive. Using them as complementary tools alongside sensory evaluation is the practical approach. Knowledge in this field will become the force opening fermentation's future.
