Fermentation Period
Fermentation period
Japanese: 発酵期間(はっこうきかん)
Time from preparation until primary fermentation stabilizes.
Fermentation periods vary by type and conditions. White miso: 1-2 weeks. Standard rice miso: 3-6 months. Red or bean miso: over a year.
Higher temperatures accelerate; lower slow it. Summer preparation may yield tasteable miso by autumn. Trusting microorganisms' pace is the shortcut to delicious miso. Even with the same preparation, fermentation speed varies by season. Winter preparation proceeds slowly, developing more complex flavors. Make the seasons your ally.
