Technique for finishing white miso in a short period at high temperature.
Quick-fermented white miso combines high koji ratio (20-30) with low salt (5-6%), completing in 1-2 weeks at 35-40°C.
High temperature accelerates enzyme reactions, rapidly generating sweetness. Finishing before Maillard reactions advance preserves the white color. Kyoto's Saikyo miso exemplifies this technique. Its short completion time also makes it suitable for beginners. A sweet aroma emerges within days, tasting possible in 1-2 weeks. The rapid pace makes it ideal for experiencing fermentation firsthand. Low salt means shorter shelf life, but that lets you fully enjoy the fresh flavor.
