An electric appliance that chops food with blades. Steamed soybeans can be mashed to paste in seconds. Far faster than hand or mortar methods, powerful for large batches.
Do not overfill — process about half capacity at a time for efficiency. Over-processing creates stickiness that traps air, so stop at desired particle size. Small batches by hand, large ones by processor — choose accordingly. Texture is adjustable by processing time. Pulsing in 5-second bursts while checking is the trick. Leaving coarseness for chunky-style miso is also popular.
