Mashing steamed soybeans for easier mixing with koji. Particle size affects fermentation.
Steamed soybeans are mashed using hands, mortar, food processor, etc. Fine mashing yields smooth miso; leaving chunks provides texture.
Finer particles increase enzyme contact area, promoting breakdown. Over-mashing can trap air. Finding your preferred texture is one of the joys of miso making. Placing beans in a large zip bag and stepping on them is a handy method. Leaving some grain creates homestyle character. This step is fun to do with children too.
