Chemical indicator of miso maturation. Uses the reaction between formaldehyde and amino acids.
Formol nitrogen is measured by titrating acid released when formaldehyde reacts with amino groups of amino acids. It indirectly indicates free amino acid content, sometimes used interchangeably with amino nitrogen.
This value rises as miso aging progresses. A standard analysis item for periodically monitoring maturation in factory quality control. Measurement is relatively simple, requiring no specialized equipment.
The formol titration method exploits formalin's reaction with amino groups to produce acidity. Requiring no specialized instruments, it is accessible even for small breweries. Graphing periodic measurements creates a maturation curve that serves as evidence for determining optimal shipping timing.
