A white miso traditionally made in Fuchu, Hiroshima. Similar in sweetness to Saikyo miso, it is used in Chugoku region ozoni and dressed dishes.
Fuchu miso is a white sweet miso produced around Fuchu, Hiroshima. It uses abundant rice koji with low salt content. While in the same family as Saikyo miso, it has a unique mellowness nurtured by Fuchu's water and climate. In Hiroshima, New Year ozoni often uses white miso, with Fuchu miso at its center. Once widely distributed via Ashida River water transport, it is a lesser-known guardian of regional white miso culture. Though production declined amid postwar food homogenization, continued manufacturing persists through brewery owners' efforts to preserve local tradition. As a guardian transmitting regional white miso culture to the next generation, its existence is precious.
