Homogenization

Process of making miso composition uniform. Contributes to quality stability and mouthfeel improvement.

Homogenization makes the entire miso composition uniform. Industrially, colloid mills further refine soybean particles and equalize distribution with koji and salt.

Homogenized miso has smoother mouthfeel with less quality variation. It also dissolves more easily in soup. However, since 'koshi-miso' (strained) and 'tsubu-miso' (chunky) serve different purposes, uniformity is not always the goal. Design judgment based on intended use is needed.

Colloid mills and homogenizers are used for industrial homogenization. The degree is controlled by shear force and processing time; excessive treatment can cause flavor compound loss and texture degradation. Technically, determining 'how uniform is enough' is critical, and that judgment reflects the product concept.
