GMP (Good Manufacturing Practice) is a set of basic management standards ensuring quality in food and pharmaceutical manufacturing. It covers facility design, equipment maintenance, raw material management, process documentation, and employee hygiene training.
Miso factories incorporate GMP alongside HACCP. GMP's principle of 'making correctly, in correct environments, with correct procedures' also applies to home miso making through thorough sanitization and measuring. Quality is guaranteed not by chance but by systems.
In Japan, HACCP institutionalization under the Food Sanitation Act positions GMP as a prerequisite program (PRP). Both hardware aspects like facility design and cleaning, and software aspects like employee hygiene training, are covered.
