Criteria for systematically classifying miso by ingredient (rice, barley, soy), taste (sweet, salty), and color (white, light, red).
Miso classification is multi-axial. By ingredient: rice miso (rice koji), barley miso (barley koji), bean miso (soybean koji), and blended miso. By taste: sweet, medium-sweet, salty. By color: white, light, red. These axes combine—Shinshu miso is a light-colored salty rice miso; Saikyo miso is a white sweet rice miso. Understanding this system provides a panoramic view of miso diversity across Japan. Classifying miso is, in essence, classifying Japan's terroir. In reality, miso holds diversity that exceeds this classification. Blended koji misos like Koshu miso and creative combinations transcend categorical boundaries. Classification aids understanding, but miso's richness always overflows its framework.
