Accounting for roughly 40 percent of national production, it is likely what most people in Japan picture when they hear the word miso. Versatile and mild, it suits miso soup and adapts easily to diverse dishes. Its versatility extends beyond miso soup to dressings, marinades, and Western cuisine pairings. Its mild flavor is a miso standard, making it approachable for beginners.
