Designing moisture content at preparation. Affects fermentation speed and texture.

Moisture at preparation determines fermentation speed and final texture. Typical miso moisture: 43-48%. More moisture means faster fermentation but lower shelf life and softer texture. Less means harder, slower aging.

Adjusted by considering steaming degree, koji moisture, seed water, etc. Squeeze test: moisture should just seep between fingers. Combining salt and moisture design makes the miso blueprint more precise. Longer steaming increases moisture; shorter yields firmer results. This subtle adjustment directly affects texture and aging speed. Keeping records improves reproducibility.
