Formulation design based on target salt concentration. Determines preservation and flavor balance.
Salt content design calculates salt amounts by back-calculating from the target concentration of finished miso. Standard rice miso: 11-13%; white miso: 5-6%; red miso: 12-14%.
Higher salt improves preservation and slows fermentation. Lower salt speeds fermentation but raises mold risk. Concentration is calculated from total weight of soybeans, koji, salt, and water, so measuring accuracy determines design precision. Start by setting target salt concentration, then calculate required salt. The formula is simple, but soybean moisture and koji water content must be factored in. With experience, the salt-sweetness relationship becomes intuitive.
