Nukadoko is rice bran, salt, and water fermented by lactic acid bacteria and yeast. Vegetables lose moisture through osmosis while fermentation creates distinctive sourness and umami.
Daily stirring balances aerobic and anaerobic microbes. The longer maintained, the more stable the ecosystem and deeper the flavor. Your nukadoko is your unique microbial community. When away, refrigerating preserves it for several days. Return to room temperature before resuming. The longer you maintain it, the more stable and personal the flavor becomes.
