The temperature at which a microorganism grows most efficiently. It varies greatly by species and serves as an important benchmark for temperature control in fermented food production.

Optimal temperature is the temperature at which a microorganism grows most vigorously. This varies greatly by species: koji mold generally thrives at 30-35 degrees Celsius, lactic acid bacteria at 30-40 degrees (species dependent), and yeast around 25-30 degrees.

Deviation from the optimal temperature affects not only growth rate but also enzyme activity and metabolite balance. Whether miso is prepared in summer or winter changes the flavor because temperature fundamentally alters microbial behavior.

Yet optimal temperature means the temperature for fastest growth—not necessarily the temperature for the most delicious fermentation. Cold-brewed miso achieves its deep flavor because slow fermentation at low temperatures accumulates metabolites that do not arise at higher temperatures.

Speed versus depth. What is optimal for the microorganism and what is optimal for human enjoyment do not always align.
