Ideally, transfer amounts consumable in 1-2 weeks to sealed containers; refrigerate or freeze the rest. Vacuum packs or zip-lock bags minimize air contact. Portioning is not mere organization — it is quality management in practice. Use clean tools and pack with minimal air. Fill to 80%, pressing wrap against the surface. For freezing, divide into single-use amounts. Handling miso with care is also an expression of respect for food.
