Miso is classified as a 'non-Newtonian fluid.' Unlike Newtonian fluids like water where viscosity doesn't change with applied force, miso exhibits 'thixotropy'—viscosity decreases when stirred. Miso becoming smoother when mixed with a spoon is due to this rheological property.
In industrial miso manufacturing, managing rheological properties directly affects quality uniformity. Data from viscometers and texture analyzers are used to optimize formulation and manufacturing processes.
