With a relatively high soybean ratio and over one year of aging, it develops a reddish-brown color. Salty with firm umami, it is essential for miso soup that warms the body through Tohoku's cold winters. A miso born of Warring States pragmatism has taken root as regional food culture over 400 years. It symbolizes the bond between miso and history.
