A traditional brewing method that relies on natural seasonal temperature changes without artificial heating or enzyme addition for slow fermentation and aging.

Tennen-jozo uses the temperature cycle of four seasons to drive fermentation. Prepared in winter, microorganisms activate from spring through summer, then aging deepens through the next winter. This natural cycle imbues flavors that quick brewing cannot replicate. Under JAS standards, miso products made without heating or fermentation-accelerating additives may carry the tennen-jozo label. The extra time means seasonal memory is inscribed in every taste. Natural brewing products vary subtly each year with climate conditions. This vintage-like enjoyment parallels the wine world. Because they are not homogenized, each year brings a new encounter.
