A brewing method that artificially accelerates fermentation through temperature control or enzyme addition. Products can be made in shorter periods than natural brewing.
Sokujo accelerates microbial activity through heating, dramatically shortening fermentation. Miso can be finished in weeks to months versus over a year for natural brewing. This modern technique enables mass production and stable supply—most supermarket miso uses it. Flavor complexity differs from natural brewing, but that does not make it categorically inferior. Knowing how to choose based on purpose is a step in food literacy. Quick brewing's establishment deserves credit for making miso widely accessible. Rather than framing natural as real and quick as fake, understanding each characteristic and choosing accordingly represents mature food selection.
