A general term for vegetables preserved in salt, rice bran, miso, vinegar, or soy sauce. Some involve fermentation; others do not.
Tsukemono are the most familiar preserved foods on the Japanese table. Salt, rice bran, sake lees, miso, soy sauce—the variety of pickling beds is vast, each yielding distinct flavors. Varieties undergoing lactic fermentation gain complex umami alongside acidity. Each region developed its own traditions, a diversity that mirrors Japan itself. Japan is said to have over 600 varieties of pickles, a diversity unmatched worldwide. Pickling seasonal vegetables preserves the harvest and brings the passage of seasons to the table.
