Ishiru, kusaya, funazushi, sunki—fermented foods that evoke their origin by name alone. Each local dish carries the history of a long dialogue between people and microorganisms. As globalization advances, bearers of local cuisine are declining. Yet precisely for this reason, movements to reappraise their value are spreading. As a counter to food homogenization, the role of local cuisine and fermented foods is significant.
