Umami synergy is the phenomenon where combining glutamic acid (amino acid-based) with inosinic or guanylic acid (nucleotide-based) amplifies umami dramatically beyond the sum of each—up to eight times stronger.

At the molecular level, nucleotide umami compounds stabilize the binding of glutamic acid to taste receptors, prolonging the signal and intensifying the sensation.

Ichiban dashi—combining kombu (glutamic acid) and katsuobushi (inosinic acid)—is the most refined application of this synergy. Adding dashi to miso soup layers nucleotide umami onto miso's glutamic acid. Japanese food culture mastered this principle long before science explained it.
