In December 2013, Washoku: Traditional Dietary Cultures of the Japanese was inscribed as UNESCO Intangible Cultural Heritage. The registration recognized not specific dishes but the value of social practices around food based on respect for nature. Sensitivity to seasonal ingredients, ties to annual events, and flavor-building through dashi and fermented seasonings—fermentation is a core technology of washoku. This inscription amounts to international recognition of fermentation culture itself. Since registration, the question of how to transmit washoku to the next generation has become ever more pressing. This inscription recognizes washoku as culture to be protected, but also demands flexibility as a constantly evolving culture. Not turning washoku into a museum exhibit but transmitting it as something that lives in daily life—that may be the registration's true significance.
