In front of the lidded miso container, Mugi wonders aloud that nothing seems to be happening.
MugiIt’s so quiet. Like nothing’s happening.

MugiThe lead role? Who do you mean?
Hakkoh-chanThe working microbes you can’t see.
Inside the miso, lactic acid bacteria in groups of four multiply first and make acid, changing the place.
Hakkoh-chanThe first to multiply are the lactic acid bacteria.
MugiFour round ones make one set?
Hakkoh-chanYes. A foursome that stands up to salt.
MugiThere were microbes that dislike salt, weren’t there.
Hakkoh-chanDifferent from those, and a different shape too.
MugiWhat do lactic acid bacteria do?
Hakkoh-chanThey eat sugar and make acid.
Into the place the lactic acid bacteria made, egg-shaped yeasts with small buds appear and begin making aroma.
MugiWhat happens once the acid is there?
Hakkoh-chanThen the yeasts start multiplying.
MugiThey look like eggs. With little buds.
Hakkoh-chanYeasts are the ones that make the good smell.
MugiThe earlier microbes change the place,
Mugiand hand that place to the next ones.
