The Secrets of Fermentation

Episode 9

Something white has appeared!

Is it mold? Do I have to throw it away?

Mugi is startled to find something white spreading across the surface of the miso.
MugiSomething white came up! Is it mold?
Hakkoh-chanColor alone won’t tell you.
MugiIt isn’t a white mold?
Hakkoh-chanThere are white yeasts too.
A film-forming yeast spreading flat and sideways is shown beside a mold rising upward from a single point.
MugiThe left one is lying flat.
Hakkoh-chanThat’s the thin film a film-forming yeast makes.
MugiThe right one is standing up.
Hakkoh-chanThat one is a mold, like fluff.
MugiSo you look at the direction, not the color.
Hakkoh-chanYes. Lying flat, or standing up.
Mugi lifts the flat white film off in a thin layer and smooths the surface of the miso.
MugiIf it’s a flat film, I don’t throw it away?
Hakkoh-chanRight. A film-forming yeast can be lifted off.
Hakkoh-chanIt dulls the flavor, so let’s take it off.
MugiFluff is a different story, then.
Hakkoh-chanIf it has spread wide, or you’re unsure, don’t eat it.
MugiNot whether it’s white. It’s the shape.
