A compound with two mirror-image stereoisomers. Despite identical molecular formulas, they can differ in taste and aroma.
Chiral compounds are molecules with two stereoisomers (enantiomers) that are mirror images—like left and right hands. Identical chemical formulas, but mirror-image three-dimensional structures.
Taste and smell receptors have chiral structures, enabling them to distinguish enantiomers. L-glutamic acid has umami; D-glutamic acid has almost none. Limonene's R-form smells of lemon; the S-form of orange.
Living organisms primarily use L-amino acids and D-sugars, but microbial metabolism can produce D-amino acids. D-amino acids in fermented foods have recently attracted attention, potentially contributing to flavor 'roundness.' Molecular 'right' and 'left' changing taste—where chemistry's beauty intersects with the eating experience.
