The loss of function in enzymes or microorganisms. Caused by heat, extreme pH changes, or chemicals—usually irreversible.

Denaturation is the loss of catalytic function in an enzyme. As proteins, enzymes lose their three-dimensional structure when exposed to heat or extreme pH, making substrate binding impossible. Once denatured, most enzymes cannot recover.

In fermented foods, denaturation is sometimes used strategically. Pasteurization kills microorganisms while inactivating enzymes, intentionally halting fermentation. The stable quality of soy sauce and sake after shipping is thanks to this process.

Conversely, 'nama-miso' and 'nama-shoyu' deliver live enzymes to consumers. Foods with active enzymes continue changing flavor and require refrigeration. Whether to deactivate or preserve—that choice defines the product's character. Knowledge in this field will become the force opening fermentation's future.
