A rice miso from eastern Shikoku, centered in Tokushima. High in rice koji and sweet, it represents Awa regional food culture.
Gozen miso is said to take its name from its use at the Tokushima feudal lord's table (gozen). With a high rice koji ratio, it has mellow sweetness and a pale color. Aging is relatively short in Shikoku's warm climate, yielding a clean taste. Neither as sweet as white miso nor as salty as red miso, its moderate character suits Tokushima's food culture perfectly. Though little known nationally, it is deeply rooted as an everyday flavor in its home region. Though little known nationally, in Tokushima a strong attachment persists that only Gozen miso will do. That local miso continues to be loved even as major manufacturers dominate nationally is itself proof of miso culture's diversity.
