Labeling containers with preparation date and ingredients. The first step of traceability.
Attaching labels to miso containers recording preparation date, ingredients, ratios, and salt concentration. Especially important when preparing multiple batches or managing across years.
Waterproof labels or masking tape with permanent marker is practical. Linked with a fermentation journal, you can immediately identify which container is which batch. Essentially the same concept as factory lot management. One small label significantly improves management quality. Adding tasting notes alongside dates builds your personal fermentation database. Years later, you can trace the trajectory of flavor changes.
